   Ingredients:
1/4 Cup of Granulated Sugar
1/2 Cup of Cajun Seasoning
1/4 Cup of Sweet Chili Sauce (Mae Ploy)
2 Tbs. Soy Sauce (Kikkoman Lite)
1 Tbs. Sesame Seed Oil
1 Tbs. Rice Wine Vinegar (Seasoned)
1/2 oz. Pickled Ginger (Minced)
1/4 Cup of Coconut Milk (Canned and Shaken)
8 ea. Sugar Cane Skewers (Purchased****)
1/2 oz. Red Bell Peppers (Julienned 1/8'')
1/2 oz. Yellow Bell Peppers (Julienned 1/8'')
1/2 oz. Red Onion (Julienned 1/16'')
5 oz. Cucumbers (Seeded and Julienned 1/8'')
6 oz. Cooked Soba Noodles (Chilled)
 
****Bamboo or Metal Skewers Can Be Used in Lieu of Sugar Cane
How to prepare Bronzed Seasoning:
  1. Combine Sugar and Cajun Spice in a small bowl.
  2. Mix well.
How to prepare Ginger Broth:
  1. Place Sweet Chili Sauce, Soy Sauce, Sesame Oil, Rice Vinegar, Pickled Ginger, and Coconut Milk into a blender.
  2. Puree on high 1 minute or until very smooth.
How to prepare Sugar Cane Shrimp:  
  1. Using a knife slice a small portion off of the top of one end of the sugar cane on an angle creating a pointy tip.
  2. Gently push the skewer through the shrimp, right above the shell of the tail.
  3. Continue to skewer through the opposite tip of the shrimp.
  4. Repeat the process until you have 3 shrimp on each skewer.
  5. Heat chargrill BBQ.
  6. Evenly season the shrimp with Bronzed Seasoning on both sides of the shrimp.
  7. Lightly char-grill the shrimp until done (approx. 3-4 minutes per side).
  8. Be mindful to not burn the shrimp tails.
How to prepare Soba Noodles:  
  1. Combine red bell peppers, yellow bell peppers, red onions, cucumbers, and pre-cooked, chilled Soba Noodles and 1/4 cup of coconut ginger broth in a mixing bowl.
  2. Mix well.
How to assemble your dish:  
  1. Divide the sesame ginger soba noodles onto the center of 4 plates.
  2. Lay one shrimp skewer over the center of the noodles and second shrimp skewer across the first one.
  3. Drizzle 2 tablespoons of coconut ginger broth over the noodles.
  4. Enjoy!
