This recipe produces a mouthwatering and crunchy biscotti with a delightful fruity sweetness that's an excellent choice for an afternoon snack or a complement to your morning coffee. The best part is that you can use any flavor of scones to make this biscotti recipe, making it versatile and easily customizable to your preferences.

Tip: You can improvise and make mini biscotti, by cutting the block of 2 scones in half before baking them the first time.

 
   Ingredients:
4 Raspberry & White Chocolate Chunk Scone Dough
 
How to prepare the Bourbon Cream: 
  1. Place the 2 blocks of 2 scones on a baking sheet lined with parchment paper, scored side facing down. Don’t break the scones apart. They need to be uniformed for this recipe
  2. If you're using a convection oven, bake the rolls for 38-42 minutes at 300°F. If you're using a standard oven, bake them for 44-48 minutes at 350°F.
  3. Take them out of the oven and let them cool completely.
  4. Cut them into ¾-inch thick slices lengthwise.
  5. Place the slices ½ inch apart on a parchment-lined baking sheet.
  6. And bake them again, if using a convection oven, bake them for 38-42 minutes at 275°F, if using a standard oven – 44-48 minutes at 325°F.
