   Ingredients:
4 oz. Unsalted Butter (Room Temperature)
1/4 tsp. Kosher Salt
2-3 Grinds of Black Pepper
2 Tbl. Basil Leaves (Chopped)
2 Tbl. Mint Leaves (Chopped)
3 tsp. Lemon Zest (About 3 Small Lemons)
1-1/2 tsp. Orange Zest
2 Tbl. Minced Shallots
1 Tbl. Parsley Leaves (Chopped)
How to prepare the butter:
  1. Place the butter in the bowl of a stand mixer fitted with a paddle attachment.
  2. Mix on medium-high speed until the butter is smooth with no lumps, scraping down the inside of the bowl as needed.
  3. Turn off the mixer and add the remaining ingredients. Turn the mixer to medium-low and mix until all the ingredients are equally distributed throughout the butter.
  4. Transfer to a container and keep it at room temperature to use on your lamb.
  5. You will probably have leftovers. Place the leftovers, covered, in the refrigerator. Pull it out of the refrigerator about an hour before you use it so that it can re-soften before being used.
