Grilled Beef Tenderloin Skewers with Soba Noodles

   Ingredients for Skewers:
2 Lb. Beef Tenderloin Tips
1/ 2 Cup Soy Sauce
1/4 Cup Brown Sugar 
Salt to taste
 
 Ingredients for Salad:
2 Whole Limes
4 Shishito Peppers
8 oz. Cooked Soba Noodles
1/4 cup Toasted Peanuts
1/4 Cup Radishes, sliced thin
1/4 Cup Carrots, sliced thin
1/4 cup Green Onion, sliced thin
1/2 Cup Coconut Sauce (see recipe here)
2 tsp. White Sesame Seeds
8-10 Cilantro Leaves
How to prepare Skewers: 
  1. In a bowl, combine Soy Sauce and Brown Sugar, mixing thoroughly.
  2. Coat beef tenderloins with the mixture, then refrigerate for 30 minutes up to 4 hours for marination.
  3. Once marinated, remove from the refrigerator and thread onto skewers, allowing excess sauce to drain.
  4. Preheat your gas grill to medium-high; avoid excessive flames. For charcoal grills, ensure medium-hot coals without visible flames. Oil grill grates to prevent sticking.
  5. Sprinkle a pinch of salt over the skewers and place them on the grill.
  6. Grill for around 5 minutes on one side for medium doneness. Flip the skewers and cook for an additional minute on the other side.
  7. While the skewers cook, cut the limes in half and add the cut side down on the grill.
  8. Add Shishito Peppers to the grill. These limes and peppers will be used to garnish the salad.
How to Prepare the Salad
  1. Combine all salad ingredients, except cilantro and sesame seeds in the bowl, and toss well to combine.
  2. Transfer to a serving bowl and top with sesame seeds and cilantro leaves.
  3. Squize previously charred lime over the salad before serving.
  4. Garnish with blistered shishito peppers and serve immediately.
  5. Enjoy!
