GRILLED COLORADO LAMB WITH BASIL-MINT GREMOLATA BUTTER

This mouthwatering dish combines the rich flavors of tender Colorado Lamb with the delicate taste of Gremolata Butter. It is a true celebration of contrasting flavors and textures, making this a dreamy meal for any family or friend gathering.

 
   Ingredients:
1 Rack of Colorado Lamb
Salt and Pepper (As Needed)
3 Tbl. Basil-Mint Gremolata Butter (See Recipe Here)
How to prepare the Lamb Chops: 
  1. Remove the chops from the refrigerator 30 to 60 minutes before cooking. Lightly season both sides of the chops with seasoned salt.
  2. Prepare a charcoal or gas grill or preheat the broiler and position a rack 4 inches from the heating element. Lightly spray the grill rack with vegetable oil cooking spray. The coals should be medium-hot for the charcoal grill. The burners should be on medium-high for the gas grill. (If single chops, high is perfect. If double cut, it's a bit hot for gas.)
  3. If using a charcoal grill, grill the chops for 4 to 6 minutes. Turn, using tongs, and grill the other side for 5 to 6 minutes for medium-rare, or until the desired degree of doneness. If using a gas grill, grill the chops for 4 to 6 minutes. Turn, using tongs, and grill the other side for 5 to 6 minutes for medium-rare, or until the desired degree of doneness. If using the broiler, broil the lamb chops for 4 to 5 minutes per side for rare, 5 to 6 minutes per side for medium-rare, or until the desired degree of doneness.
  4. Cut between the bones of the rack of lamb to make 8 chops.
  5. Season lamb chops with salt and pepper.
  6. Place 4 chops on each plate.
  7. Top each chop with about 1 tsp of the Gremolata butter and let it melt over the chops.
  8. Serve with our roasted harissa cauliflower with feta yogurt.
